Some of my kids really like to cook – which is good for us at the moment, while I am on rest!

Anyway, today is the optional memorial of Our Lady of Fatima. We tend to tie in a lot of our cooking with the liturgical year and thus cooking becomes our unchooling curriculum!

I have been doing an internet search for recipes from Portugal and found this site – thought I’d share as my kids are getting interested in choosing something to cook for dinner or dessert tonight.

At the moment, there is a debate going on as to whether to make the Holiday Sweet Bread, the Filhos or Doughnuts or the Portuguese Custard tarts...

Leonie, eating around the world for the feast days is a great way to learn. We do it some, but wish I was more consisent. Ironically I just posted a Portuguese family recipe (dh family is Portuguese) for OL Fatima on the Catholic Cuisine blog.

Carne Vinho de Alhos (meat in wine and garlic)
Ingredients:
We use country style pork spare ribs but lean pork chops can be used. 1 part red wine vinegar to 2 parts water is the liquid base. For 2 1/2 pounds of meat we have used 1 cup vinegar & 2 cups water.

lots of garlic, crushed
1 tsp. cumin
1 tsp. allspice
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
salt & pepper to taste

Add spices to vinegar/water mixture. Mix liquid and add meat. The meat in the marinade should ideally set in the refrigerator for 2 days before cooking to soak up seasonings according to my in-laws. This is optimal but could be marinated shorter time. Bake at 375 degrees until cooked through - time will vary by quantity. Pour off drippings and grease at least once during cooking. The finished meat should be without liquid, but not dry. For larger quantities of meat increase water, vinegar, and spices.

And I have been using this site for Portuguese recipes (specifically the Azore Islands which is where my husband's family is from) - Ana Taveira's Azores Traditional Recipes. It focuses on their religious festival foods.

Thanks for the links to recipe ideas. I tried following the chicken and wine recipe on Mary's link, although I had to do a few substitutes.

To switch from food to books (which seems so easy around here ), I'm going to date myself and ask about an old resource on Our Lady of Fatima. Did any of you grow up with the Blue Army and their materials?

One thing we had growing up was this large sheet of paper that you cut out multiple pages to make a booklet on the story of Fatima for children. Each page was 2x3 (approx), with a picture on one side and text on the other, and then we stapled it all together. Anyone remember this? I was wishing I could find it again.
