I use crushed cornflakes (gluten free)or chips for bread crumbs. I use a gf flour mixture that I have had great success with.

6 C white rice flour
2 C potato starch
1 C tapioca starch

For each cup of flour in a regular recipe, add 1 tsp of xanthan gum. Of course, if I'm using the flour mix just for thickening, I don't add it. I made homemade macaroni and cheese from Betty Crocker cook book last week. It was actually quite tasty! I used the Tinkyada brown rice pasta.

Amie, you can learn more about celiac here. (there's one link on the word "celiac" and another from the word "here") There is a difference btwn celiac, gluten sensitivity and wheat allergies. My family is gluten sensitive. Two of my sisters have celiac. If we continued to eat wheat, barley and rye, we would eventually develop celiac as well. We've been on the gluten free diet for four years and it's just a part of life now. I've found through trial and error what we like and don't like in the way of mixes and breads. Mary, I've never tried Pamela's bread mix but I love the pancake mix and brownie mix. I've made the brownies for several occasions and gluten eaters are so surprised they're gluten free! Of course, a good layer of frosting helps, too!
